Simple winter salad recipes, hassle free & nutritious

These tasty salads are a great  combination of fruits, vegetables, nuts, and other ingredients. These salads go well with  soup, or you may eat them by themselves.

1.Spinach Salad with beet beans & Feta

Ingredients –

Ingredient Checklist

8 cups baby spinach

1 tablespoon extra-virgin olive oil

1 cup thinly sliced red onion

2 plum tomatoes, chopped

2 tablespoons sliced Kalamata olives

2 tablespoons chopped fresh parsley

1 clove garlic, minced

2 cups steamed beet wedges, 

2 tablespoons vinegar

¼ teaspoon salt

¼ teaspoon freshly ground pepper  salt

  • Put Spinach in a bowl 
  • In a big fry pan, heat the oil over medium heat. 
  • Add onion and cook till they soften
  • Add the tomatoes, olives, parsley, and garlic. 
  • Cook until the  tomatoes start to break down. 
  • Add beets, vinegar, salt and pepper and cook, stirring, until the beets are heated through
  • Add the beet mixture to the spinach and toss. 
  • Serve hot. 

2.Thai Green Papaya Salad Ingredients 

Benefits of Papaya in winters – 

  • Increases body heat and balances Vata and Kapha effectively. 
  • If you are struggling with constipation during the winter season then papaya can help a great deal.
  •  Papaya is filled with two enzymes – papain and chymopapain. These two enzymes help in digestion.
  • Papaya is good for your heart, it reduces the risk of heart diseases.

Ingredients – 

2 cups raw papaya

1 thai red chilli

1 tbsp garlic (lehsun)

1/2 cup french beans

1/2 cup carrot

2 tbsp  coriander (dhania)

2 tbsp basil

1/2 cup cherry tomato halves

1/4 cup tamarind (imli) pulp

1/2 tsp honey

1/4 tsp soy sauce

salt to taste

1/4 cup coarsely crushed roasted peanuts

  • Blanch French beans 
  • Crush garlic and chilli for paste
  • Add the French beans and grated carrots one by one and crush them a little too. 
  • Add papaya and pound it well too. 
  • Mix tamarind (imli) pulp honey & soy sauce for dressing. 
  • Add dressing to salad. Pound & Toss
  • Add coriander, basil cherry tomatoes, and salt. 
  • Toss and garnish with peanuts 

3.Asian Cabbage salad

Ingredients 

1/2 cup almonds

½ small sized green cabbage 

½ small sized  red cabbage (optional) 

1 medium red bell pepper 

1 cup carrots 

1/2 cup  fresh cilantro/coriander 

¼ cup rice vinegar

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon creamy peanut butter

1 tablespoon minced fresh ginger 

  • Roast the almonds a little
  • Whisk together the dressing ingredients: rice vinegar, honey, soy sauce, peanut butter, and ginger. 
  • Place in a bowl green and red cabbage, bell pepper, carrots, edamame ( optional) , and cilantro. 
  • Pour dressing over the salad to moisten it. Toss and add more as desired. 
  • Add the almonds and give the salad a final, light toss.

4.Southwest Spinach salad

Ingredients 

1/2 cup plain nonfat Greek yogurt

1/2 medium avocado, peeled and pitted + ½  avocado sliced

2½ tablespoons freshly squeezed lime juice

1/2 cup fresh cilantro /coriander 

1/4 teaspoon salt

8 cups baby spinach

One 15-ounce can black beans, drained and rinsed

1 cup corn, drained

1 cup halved tomatoes

1/4 cup chopped  onion

  • Blend Greek yogurt, avocado,, lime juice & cilantro /coriander together 
  • Your dressing is ready. 
  • Combine the rest of ingredients and add dressing 
  • Toss and serve. 

5.Sprouted Moong Salad With Pomegranate

Moong sprouts – ¾ cup

  • Give a toss 
  • Mix well
  • Add the salt, Black pepper and lemon
